List of Wikis
It's all fun and games until you realize anyone can install Mediawiki. The following is a (perpetually incomplete) list of wikis I find online that are of some interest, though I don't necessarily visit most of them regularly (or more than once). My priority is wikis that aren't really often listed elsewhere and are self-hosted, but may also include wikis from sites like Wikia and whatnot.

Meatball Wiki | Internet | The cornerstone of knowledge for the study of online communities. A bit abandoned, but its ruins are full of very valuable info. |
Super Mario 64 Hacks Wiki | Videogames | Wikia repository of SM64 romhacks and related information. |
The Wiki Wiki | Wikis | A Wikia Wiki about Wikis, also host of some lists of Wikis (Making this List a partial List of List of Wikis). |
Timelines Wiki | History | A collection of timelines of various events and things, both OL and IRL, in Wiki format. |
Wiktenauer | History | An online library “seeking to collect all of the primary and secondary source literature that makes up the text of historical European martial arts research and to organize and present it in a scholarly but accessible format”. |
Signal Identification Wiki | Technology | A compilation of both identified and unidentified radio signals heard from all over the world, including but not limited to numbers stations. |
Super Smash Bros. Wiki | Videogames | Honestly, I only played the Nintendo 64 version. |
Wikiart | Art | An Online Encyclopedia of Visual Art. Fairly good. |
Esolang | Programming | A wiki for the documentation of “esoteric programming languages”. |
Osamu Sato Wiki | People | Dedicated to the life and works of digital artist, musician and videogame developer Osamu Sato. |
